Famous Quotes To Live By:

"Far away in the sunshine are my highest aspirations. I may not reach them, but I can look up and see the beauty, believe in them and try to follow where they lead."

"Courage is the greatest of all the virtues. Because if you haven't courage, you may not have an opportunity to use any of the others."
     --- Samuel Johnson

"The hero is the one who kindles a great light in the world, who sets up blazing torches in the dark streets of life for men to see by. The saint is the man who walks through the dark paths of the world, himself a light."

POETRY OF THE WEEK

" God's Tears "

By: Emma Scott
Age: 11

As we heard the crash of the tower and the sound of the yells, we heard God’s tears, we heard the terror in the throats of the people, heard the crash of the second plane, heard the building burst to flames.

Our country heard the cries, we heard the grief, we heard the stories of heroes, heard the great deeds then done, heard the Flight 93 touch down.

We heard the death toll, we heard the losses on the radio, we heard God’s sobs, and we heard the pledge of allegiance, the national anthem, we heard the praying, heard the praises.

We saw the wreckage, saw the planes, the tears, saw the mourning, saw the flags, and saw the love.

We sensed the hope, we sensed the love, we sensed the God of Israel, we sensed America at it’s best.

We heard the hope. We saw the love. We sensed our God, that is America.

RECIPE OF THE WEEK

My Favorite Meatballs

This dish goes very well with garlic mashed potatoes and a vegetable side dish. For a shortcut, I use frozen pre-cut peppers and onions.

Prep Time: 30 Minutes
Cook Time: 1 Hour
Ready in: 1 Hour 30 Minutes

Ingredients:

1 - tablespoon butter
1 - cup chopped green bell pepper
1 - cup chopped onion
1 - (10.75 ounce) can condensed tomato soup
1 - (10.5 ounce) can condensed chicken and rice soup
1/2 - cup water
1 - pound ground beef
1 - egg
1/8 - cup milk
2 - slices bread

Directions:
1. Melt butter in a large saucepan over medium heat. Saute green pepper and onion for 5 minutes, or until tender. Stir in the tomato soup, chicken & rice soup and the water and bring to boil. Reduce heat to low and allow to simmer.

2 Meanwhile, in a separate bowl, combine the ground beef, egg and milk. Break the bread into very small pieces and add to the bowl. Mix together well. (Note: The kids love to use their hands to mix this. Be sure they wash them well before AND afterward to avoid any contamination.)

3 Shape the meat mixture into meatballs and drop them into the soup mixture. Continue to simmer over low heat, uncovered, for 45 to 60 minutes. Stir occasionally, but be very careful not to break the meatballs.

Makes 6 Servings
